Thor’s Hammer Bone-in Shank is a visually-impressive bone-in beef Shank that has been french-trimmed, creating a handle for a meaty, hammer-like presentation. It’s perfect for a slow-cook or BBQ, resulting in incredibly tender, fall-apart meat with rich, marrow-infused flavour from the exposed bone. It’s also ideal for braising or smoking low-and-slow for hours until fork-tender.

Chuck

Chuck comes from around the shoulders and is often sold pre-diced to be used in certain dishes. The shoulders are one of the hardest working parts of the animal, so chuck can be quite tough if not cooked correctly. Because it has a good fat and tissue content which needs to be broken down, chuck steak is usually used in stews, casseroles or pies, which are cooked for over an hour.
