A sheep in its first year is called a lamb, and its meat is also called lamb. Like all our produce they are free range and grass fed. Per Shank weight is approximately 500-600g.
The lamb shanks are taken from both the front and back legs, and boast melting tenderness if cooked long and slow, with the meat falling away from the bone.
