    These chops were larger than those found in my local butchers but that wasn’t the only difference. The quality of the meat and the resulting taste was unparalleled compared to the meat I usually buy.

    Most tender and flavourful neck chops, makes excellent soupy mutton curries. I haven’t tried them from anywhere else but this is going to be the benchmark for sure.

    I opted for the most expensive option (back chops), and I wasn’t disappointed. Whilst the price may have been premium, so was the taste and tenderness. Please don’t ruin these chops by cooking them well done and then complaining that you have received chewy steaks. It’s absolutely safe to eat these rare on the inside. I usually opt for a medium doneness on the inside.
    I achieve this by first soaking them in water and 2 tablespoons of vinegar for 20 minutes. This tenderises them a bit more. And then I add the marinade. I let it sit in the marinade for at least a couple of hours. I then throw it onto a bbq that is at around 450F. It gives it a nice sear on the outside whilst ensuring that it doesn’t overcook the inside. All it needs is around 1 min on each side and they’re done.
