The rib is so prized by butchers, chefs, and home cooks alike because of its generous, rich marbling that runs through the beef. Our Rolled Rib of Beef is no different, with each joint being matured in our dedicated dry aging room before being hand cut, boned, and rolled for an easy carve joint.
Made from the top part of the center section of rib—specifically the sixth through the twelfth ribs— the beef rib primal cut is used for the traditional standing rib roast (also called prime rib). It's also the source of the delectable ribeye steak as well as the classic French entrecôte.
